What's for Dinner?

I didn't throw paper balls. I used true and tested battle-hardening methodology aimed at strengthening decision making and improving resolve under provocative conditions.

No pictures. Just words. Cause this is one UGLY Salad.

So for us in Southern California we've had a few days of heat. When this happens my desire to turn on the stove or the oven evaporates. So I usually fire up the BBQ and make a nice salad. This particular salad is a family favorite. And though it sounds a little strange, I PROMISE it is absolutely delicious. Bread is the unusual ingredient here and it totally makes the salad, it soaks up all the lovely vegetable juices and dressing and becomes meltingly soft and flavorful. BTW this is my favorite way of making it but there is tons of room for improvisation. Put your favorite ingredients in. I like tomatoes. Lots of tomatoes. Also leaving out the quantities because they are totally adjustable.

Panzanella (Bread Salad)
Good chewy day old bread
A tomato or two
A nice cucumber
a handful of basil
Feta cheese
garlic
olive oil
lemon

Cut up the feta and basil, toss together with olive oil, lemon juice, crushed garlic, salt and pepper and let sit while you cut up the veggies. Cut up the tomatoes being sure the preserve the juices and dump into the bowl with the feta. Add cut up cucumbers and mix. Let the veggies sit a few minutes so that the juices run. Then add the cut up bread cubes and toss together. Done. Enjoy by itself or with some cut up chicken. Delish.

Variations:
Endless.
Personally I like to add avocado.
You can also play with the herbs, I love cilantro in this as well or fresh oregano
You can you try other cheeses instead of feta, like goat cheese or burrata
Play with the veggies. Go ahead. It's fun.
